"If there is any advice I can give in regards to grilling, it is to make sure you have an umbrella near by.  The high noon sun in South Florida over a hot grill with no umbrella is too much for an Irish boy like me.  I resorted to a bad hat & cold towel on my neck.  Luckily I had a change of clothes before we went on-air!  Here is another recipe for you, if you are in the mood for grilled fish.  It goes great on some grilled bread with the vegetable relish recipe below.  Enjoy!"Cool

Grilled Garlic Grouper with Balsamic Accented Vegetable Relish (Serves 4)

 4 4-ounce portions of Florida Grouper (note: it is best to request tail cuts or ask the fish market to butterfly a larger piece for quick cooking and easier eating)

1 clove garlic – minced

1 lemon – zested and ½ reserved for fish

1 red onion, 1 zucchini, 1 yellow squash, 1 small eggplant – sliced lengthwise ¼ inch thick

¼ C balsamic vinegar

¼ Cup chopped fresh basil

1 ½ Tablespoons Dijon mustard

4 small ciabatta rolls or your favorite hamburger rolls

Olive oil, salt & pepper to taste

¼ Cup Mayo mixed with 2 teaspoons capers (optional)

 

  1. Season vegetables with salt and pepper and drizzle with olive oil.  Grill each slice on medium- high heat until charred on grill and ¾ way cooked through – about 3-4 minutes per side (the relish tastes the best when the vegetables are still crunchy).
  2. Remove the vegetable and allow to cool at room temperature.  Mix the balsamic, basil and mustard together.  Coarsely chop the vegetable and toss with the balsamic mixture.  Taste and adjust seasoning with olive oil, salt & pepper.
  3. Season the Grouper with salt & pepper and mix the minced garlic, lemon zest and 2 Tablespoons olive oil and brush over fish.
  4. Be sure to clean and spray non-stick spray on grill before cooking fish.  Place the fish portions on a medium-high heat.  Cook for 3 minutes and flip.  Continue cooking for 2 minutes or until firm to the touch.  Remove and squeeze fresh lemon juice over top.
  5. Place your roll on grill open face for 2 minute to toast.  Spread a Tablespoon of optional caper mayo on base of roll, top with fish filet and then vegetable relish.

PHOTO SHOOT FOR DUMMIES

Everybody in the world knows something is for sure … modeling is not easy. If you want the heads up of modeling to make it easier then read along. First things first, posture is very important in a shoot. You must always keep your back straight, your shoulders straight and always remember to suck in that stomach! It doesn’t matter your weight or shape, but keeping a good posture will always give the illusion of a great slim figure. Bad posture in modeling will give the illusion of a larger stomach. While keeping good posture and modeling, you must never lose concentration and don’t forget to breath well and to appear calm and not in pain. Also in posing, if a limb of your body is different from the other as to length or being straight always bend the other limb so the pose looks normal. It is nice and pleasant to give an asymmetrical look to the body in a photograph.When doing sitting poses never fully set the thigh on what you’re sitting on or else it’ll give the effect of large thighs. Also, you might want to shift parts of your body a bit or “roll” a hip up to give the illusion of a fit figure. When posing, you don’t always have to look directly at the camera; you can look away, squinting the eye a bit and tilting your head and neck if you want. Squint the eyes a bit so you don’t look like you’re staring off into space. If you look directly at the camera give the “look” some warmth and “flirt” a bit with the camera so you don’t give a cold stare. Also, you can show off a warm smile, or give the expression some variety like laughing or pouting. Another nice thing to do is “smile with your eyes.”You will also do a variety of types of photo shoots. One can be sort of the everyday photography. You don’t have to look like you are a broken-down doll, but like your everyday life with casual and everyday expressions. The other type of photography is in movement. When you are moving in a photo shoot you must always be aware of your face and body so you don’t look uncomfortable. Oh Yeah…never forget what you are selling! Always keep product visible and make it look good. The last two is a headshot when it focuses on the face and neck. In a body shot always be aware of the pose and don’t forget your body and face and keep these tips in your head. When doing these photographs, don’t forget that they are focused on you so give yourself some spa treatment. You deserve it!

Spring 2009 Fashion Weeks most Wearable Trends

 

Along with loads of A-list celebrity sightings, New York Fashion Week is known for debuting important new fashion trends, and this season was no exception. While some, like sheer pants, bondage dresses and stomach-baring crop tops, are better left to red-carpet daredevils, there are plenty of pretty new styles anyone can pull off, including these fuss-free, flattering looks.

Hot Pink

While cobalt blue was the It color of 2008, magenta is shaping up to be the must-have shade of ‘09. Doo.Ri, Matthew Williamson and Adam Lippes coated their collections in the color—which is good news for the rest of us, as it flatters nearly every skin tone. 

Oversize Necklaces

Big glittering necklaces topped off many spring looks, but few shone as brightly as those seen on Vera Wang’s runway. Extra-long lariats like hers streamline the silhouette and update any outfit. Translation? One bold necklace is all you need to look fit and fashionable! 

Black-on-White Print

The little black dress just got a big boost: As seen at Oscar de la Renta’s show, artful black stripes on a white background make a fresh, graphic statement.  

The Oversize Pattern Bag

Why carry a basic-black bag when there are so many perky, colorfully printed totes available? On the Miss Sixty runway, models carried bags that matched their sundresses—a bold look that surely would prevent anyone from mistakenly swiping your handbag.  

Big Bangles

If the exotic layered-on look à la Marc Jacobs spring 2009 seems too complicated, simplify the new style by slipping on a few big bangles.

Mix-and-Match Patterns

Designers put patterns together in unexpected ways this season. To pull off the kooky-cool style without looking crazy, take cues from Michael Kors and stick to patterns that share the same hues. 

The Military Jacket

Often called the Sergeant Pepper jacket—for its appearance on the cover of the Beatles’ 1967 album, Sgt. Pepper’s Lonely Hearts Club Band—the cropped military coat returns for spring. With a sharply tailored fit and subtle embellishment on the front, the style serves as a great alternative to the jean jacket or blazer 

Color-Block Prints

You’ll want to give floral prints a rest for a season or two. Instead, try bold blocks of color in complementary shades over spring’s loose, sexy pieces. 

Embellished Boho

Anna Sui, Diane von Furstenberg and other optimistic designers showed laid-back neo-hippie styles on the runway. Get into the swing of things with a colorful, breezy dress, beaded necklace and lace-up flat sandals. Peace out. 

Relax-Fit Pants

Forget about wide-leg or skinny jeans. Spring’s must-have silhouette: relax-fit pants. Similar to the boyfriend jeans Katie Holmes has been spotted in lately, the new cut is loose and easy at the hips, then tapers delicately above the ankle. This wins the chilled-out title of Most Comfortable New Trend on the Catwalk! 

Zipper Accents

Once relegated to Michael Jackson impersonators and lead singers in punk bands, zipper accents turned up on spring’s most feminine pieces. The flirty zipper trim on Phillip Lim’s silk tank balances downtown edge with uptown elegance.
